Udon
Unlike ramen, which is a fried wheat noodle, or soba, which is a buckwheat noodle, Udon is a Japanese noodle that is made of wheat flour, salt, water, and starch. Common Udon dishes include Kake udon (udon served in a light broth) and Tanuki udon (udon soup topped with fried tempura batter).
Ukoy
In Filipino cuisine, Ukoy is a deep-fried dish consisting of rice or wheat flour batter, shrimp, egg, sweet potato, squash, carrots, onions, green onions, papaya, and mung bean sprouts. This dish is usually served with vinegar sauces and consumed by itself, or over rice.
Uszka
In Polish cuisine, Uszka (meaning “little ears”) refers to small flour and egg-based dumplings that have a filling of mushrooms, butter, onions, parsley, egg, bread crumbs, salt, and pepper. Uszka is commonly eaten on Christmas Eve and can be eaten in a soup broth or simply boiled as a side dish.
